Every time I go to lunch at my friend, Barbara’s, the smell of homemade banana bread is wafting through the entire house. Finally, she shared the recipe handed down by her mother. Hope you enjoy!
1 ¾ C Flour
1 ¼ tsp Baking Powder
½ tsp Baking Soda
¾ tsp salt
2/3 Cup Sugar
1/3 Cup shortening (we always substitute butter)
½ Cup walnuts (we usually skip the nuts)
Bananas 2 – 3 ripe ones
Sift flour and measure.
Add B powder, soda, salt.
Sift twice again. (This is optional or you can just mix things together).
Gradually add sugar to  shortening.
Add eggs one at a time.
Peel and mash bananas to measure one cup. (Or, just add 2 or 3 bananas).
Add half of flour mixture to batter.
Add bananas and rest of flour and just barely mix.
Pour into greased loaf pan.
Bake for 55 minutes at 350 degrees. Â (Length of time depends on your oven.) I like to use the middle rack.
Check with toothpick. If it comes out clean, it’s done. Enjoy.
